Lavender Lemonade Gelatin

  • 3 cups water, divided
  • 1 cup lemon juice
  • 3 TBSP honey (or more, to taste)
  • 1 sprig fresh lavender, 4-6 inches or so
  • 2 TBSP gelatin
  1. In a saucepan, bring 2 cups water, the lemon juice, honey and lavender to a slow simmer.
  2. Once simmering, turn off heat and allow the mixture to "steep" while you prepare the gelatin.
  3. In a medium mixing bowl, mix 1 cup cold water with gelatin and whisk to combine well, trying to get rid of any lumps. Make sure to scrape the sides and bottom of bowl.
  4. Let the gelatin and water mixture sit for one minute.
  5. Using a strainer to eliminate solids, pour lemon and lavender mixture into the gelatin solution and mix well. Make sure you don't have any lumps.
  6. Let cool slightly and then pour into a baking dish, or individual serving dishes.
  7. Set in fridge and chill until solid.
